Pecan Finger Cookies

Being born and raised in France, I am not too big on baking cookies (cakes, yes! pastries, yes! bread, triple yes!), so I love this recipe because it tastes amazing, it is different and most of all, it is super easy to makes. Win, win, win.

  • 1 cup butter
  • ½ cup confectioner’s sugar
  • 2 tsp vanilla
  • 2 cups flour
  • 2 cups pecan, chopped

Cream the butter and sugar together. Add the vanilla and flour. After mixing well, add chopped pecans. Refrigerate until the dough is very chilled (1 hour or more). Break off 1” ball sized pieces, and form into small logs. Bake in pre-heated 350 oven until the edge are golden. When still warm, roll in more powdered sugar to evenly coat.
