As the winter seem to start lingering and I count the days until summer, I find myself longing for bright colorful food. Thank goodness there are beets! I use this ultra simple beet soup recipe to beat the winter blah:
Ingredients:
– 1 red onion
– 3 large beets
– 1 cup of red lentils
– 4 cups of vegetable broth
Chop the onions in large chunks and toss them in a large sauce pan with some olive oil. Cook over medium heat until translucent. Add a cup of rinsed lentils, and the beets, peeled and quartered. Cover with the broth (I usually add a bit more and keep the broth from the soup to eat separately – I love the broth and it helps keeping hunger at bay) and bring to a boil. Cover and simmer for 30 minutes. Blend and serve with a dollop of heavy cream. Not that was easy, wasn’t it?
